Increase the number of levels on the side menu

Hi,

At the moment the side menu is set at two levels. (Main category and 1st sub-category) I have got another sub-category after the 1st level, however, at the moment it cuts off the text. I want to be able to add a 3rd level to the menu to enable all of the text to be clear and visible.

We have spent along time trying to sort it but seem to keep hitting a brick wall. Does anyone have any ideas how to add that third level menu so that it shows up the same as the 1st level and without slicing off any text?
