restoring order history

Hi, 
I need your help please!
Yesterday I had some issue with my website ( I installed google analytic module, and somehow it made a total mess with my website , the products were not shown, so I deleted this module, and since the issue was still there, I did used "CLEAR CACHE " from the back office ( and to make the issue go away I deleted the "cache" from my Prestashop BackOffice Advanced-performance- clear cache.
When I cleared cache, my last modification on layout of the website disappeared. Since I do not have the developer to help me longer, I decided to make a restore from the back up that my server providers take every night. Simplys control panel. 

I did a restore from the last backup before 17/8 .  The design / functions of the website is now good, but I have lost the order received yesterday and all new customers registrations. Because I do not know how to only restore one part or the whole website but NOT the part that has anything to do with orders, addresses, customers registrations. 
Can you please help me and tell me how I can make a restore of everything but not this part? 
I really need all the customers information. 
Also I have no developer to help me with all this and I have no it background, but if you explain me I can follow instructions.

Strange story that deleting the cache changed your layout.

Anyway, the best way in those circumstances is to make a backup of the relevant tables (ps_customer*, ps_order*, ps_guest*, etc). Then you do the restore, then you delete from the restore those tables and import them from the backup you just made.

Thanks a lot for answering. This is exactly what I did.
When the developer made my website I had so many errors in it, and every times I told him that different things were not functionning well, for example , the shopping basket was not updating at all. and he always told me to open different cache files and add the codes he wrote me. The most of this codes were saved in cache files under public_html/themes/classic/assets/cache. Now suddently again the shopping basket from mac devices are not working. :(

Are you able to help me with this please? I just startet to run a facebook ad and so sad to discover that it stopped working again . 
I have no problem from android devices or desktop. my website is www.benush.es
