In the Shipping tab -> Carriers if I modify a carrier it's ID simply get's higher in increments of 1.

Also, do you know how I could delete the orders, I made some test orders with my test account and I keep seeing them in Orders tab.

When you edit a carrier a new one gets created since the previous one (you edited) is referenced by old orders.

You can change the code to display DELETE button in order list so you can select which order you want to delete
