modify article creation date from the BO

I want to create a box where I can modify the product creation date so that it appears in new products.

When I no longer want to sell a product, what I do is overwrite that with a new one so that I don't have to delete them. but when doing this, prestashop does not put it in the new products section

Prestashop files are very messy, if someone could help me do it I would appreciate it.
Also, I don't know how to retrieve the creation date of the database and update it from the backoffice.
