Help w/ Address form (Hide field Country)

Sorry if it's the wrong place but I need a little help from someone more technical than me.

My instalation has just 1 country. So I remove all countries from the DB and left only the one I'll work.
In menu International->Location->Country I remove the fields country and city from adrress format. But this causes a 500 internal server error. This error is known and it seems will be solved on the next update.
But I need a workaround from that...

All I need is hide from the custormer adress form those fields (Country and city) and let the system save internally default values (could be hardcoded). But I don't find the right .TPL file to do this.

Please anyone could help me with this issue??
