Redirecting root traffic to subfolder is easier. You may ask your host provider or local technical support. (there is a sample .htaccess in the link below forwarding from root to a subfolder "prestashop".)

Copy shop to root level can be done but need to modifying host file anyway You may refer here (

. (I never done this type of migration.I just migrate/copy PS installation to different subfolders. ), I recommended you keep the "shop" until you sure root copy is working properly. 

Either ways above, make sure you know how to make a FULL.BACKUP and knows HOW to restore it JUST IN CASE of migration failure.
