How to change what incuded customer emails (order_conf.html)

Im missing a load of info that i want to be included in the emails sent to my customer and also in the email sent to me when an order is placed. At the moment {delivery_block_html} is missing info about the state and phone numbers etc - actually i want all the customer specific info displayed in the email sent to me. Im also missing info about gift card messages from my one page checkout module.

 

Is there a list of all the 'key words' (marked in red in the attached image) that i can use when editing the order_conf.html file? or maybe the keywords link to entries in the database?

They are generated in the corresponding php-script, where these variables become filled with their content and are shown in the html-output.
